I have a Jaques Lemans G126. It has the 3 little dials in the center. two are for the stop watch function. The other one counts 60 sec of each min. And what would normally be the "second hand" only moves when you have the "stop watch" going. Is there a way to set it so the 3 normal dials work in a normal fashion and the 3 little dials in the center are for the "stop watch" function?

The type of stop-watch functionality you described is often used by watch producers. It is used to make the stop-watch function more legible and visible at a glance. I don't think there is any way to change the way it works as it depends on the work of the movement, so the movement should be modified to change the functionality of the watch and it can be performed only by a professional watchmaker.
